My mother learnt how to make charot [charoset] – this mixture of apples and walnuts, which symbolizes the material from which the Jews made bricks in Egypt [the mortar they used in the constructions] – from her mother, just as her mother had learnt it from her mother, so it was passed on from mother to daughter. She also knew how the tip of the wing of the poultry had to be roasted a little more than usual to symbolize the offering of the sacrifice in ancient times.
