Borekas de patata kon kezo (Potato borekas with cheese)

- 2 boiled, peeled and mashed potatoes
- 2 beaten eggs
- 100 g. of white cheese
- 1 glass of grated sheep cheese
- 1 pinch of salt
- 1 egg yolk and some grated gruyere

Take the mashed potatoes, add the beaten eggs, white cheese, grated gruyere and salt, and mix them well. Prepare the paste as described in the  Eggplant Boreka Recipe. Fill the paste with the potato-mix and  use a glass to give them a semi circular shape. Put the borekas on an oiled oven tray. Use a small brush to spread some egg yolk over the borekas, and sprinkle some grated sheep cheese on them bevore shoving the tray into the oven.
