Bulemas de espinaka (Spinach bulemas)

- 2 thin layers of dough
- 2 eggs
- 1/2 kg. of spinach
- 100 gr. of white cheese
- 1 glass of grated gruyere
- 1 pinch of salt
- 1 egg yolk
- some margarine

Wash the spinach leaves, cut them to small pieces and let them dry. Add the eggs, grated cheese (leave some) and salt. Mix well.  Now divide each dough layer into 8 triangles each. Spread some of the mixture on the longest side of the triangle. Now roll up the triangle until you have cylinder, then roll up the cylinder into the shape of a rose. Finally spread some egg yolk, grated gruyere and a some margarine over each of the little roses. Place them in a row, and they are ready to bake!
