Borekas de patata kon kezo (Potato borekas with cheese)

Ingredients:
- 2 boiled, peeled and mashed potatoes
- 2 beaten eggs
- 100 g. of white cheese
- 1 glass of grated sheep cheese
- 1 pinch of salt
- 1 egg yolk and some grated gruyere
