Ojas de parra kon avas (Vine leaves with beans) (Izmir style)

- 250 gr. of vine leaves
- 250 gr of minced meat
- 1/4 glass of rice
- 7 tablespoons of sunflower oil
- A pinch of salt
- A touch of pepper
- 1/2 a bunch of parsley (very finely chopped)
- Juice of 1 lemon

Boil the leaves in slightly salted water. Knead the meat, rice, salt, pepper, parsley and add half of the lemon juice. Fill the strained leaves with this mixture. Boil some water in a pot, just enough to cover the leaves. Once the water has evaporated put some oil on a plate and place the stuffed leaves on it. Decorate with parsley, chopped lemons etc.
