Encinara (Artichoke)

Ingredients:
- 6 artichokes
- 2 lemons worth of juice
- 1,5 tablespoons of sugar
- 5 tablespoons of sunflower oil
- a pinch of salt

Instructions:
First, chop off the top of the artichoke using a sharp knife, so that approximately 5cm are left of the stalk. Now, start to peel off it's outer cover like. just like you peel an apple,  but be careful not to cut off the artichoke's stalk. The feather like part is first to go, take off about 1 cm. Now,  scoop out some of the inside using a teaspoon. when you are done, take half a lemon, dip it in salt and then rub it  all over the artichokes before thoroughly washing them. Now pop the artichokes  in a saucepan, add the lemon, sunflower oil, sugar and salt, then cook on a small fire. Nice appetizer!
